Tuna Nicoise Salad

My husband prepared this tuna salad for me to take into work. It is a very healthy, delicious and filling light lunch.

Salad Ingredient

Tuna

Few slices of cucumber

3 cherry tomatoes

Hand full of olives

Salad leaves: lattice and rocket

Capers

Sliced red onion

1 boiled egg sliced

Salt and pepper

Lemon wedge

Top with crispy onions to give it that extra crunch!

 

French Dressing Ingredients

¼ of a clove of garlic

1 teaspoon of Dijon mustard

sea salt and freshly ground black pepper

2 tablespoons white wine vinegar

6 tablespoons extra virgin olive oil

 

Method

1. Mix white wine vinegar with salt and pepper in jar. Put lid on & shake until salt dissolves.

2. Add the dijon mustard and shake again.

3. Add olive  oil & garlic and shake well.

Serve over salad or put in container to serve later!

  1. I love Tuna Salad, my husband doesn’t so much. But minus the capers and the olives and it would be great. You should try Flax seed crackers with it, It makes it even better.
