My husband prepared this tuna salad for me to take into work. It is a very healthy, delicious and filling light lunch.
Few slices of cucumber
3 cherry tomatoes
Hand full of olives
Salad leaves: lattice and rocket
Sliced red onion
1 boiled egg sliced
Salt and pepper
Top with crispy onions to give it that extra crunch!
French Dressing Ingredients
¼ of a clove of garlic
1 teaspoon of Dijon mustard
sea salt and freshly ground black pepper
2 tablespoons white wine vinegar
6 tablespoons extra virgin olive oil
1. Mix white wine vinegar with salt and pepper in jar. Put lid on & shake until salt dissolves.
2. Add the dijon mustard and shake again.
3. Add olive oil & garlic and shake well.
Serve over salad or put in container to serve later!
